I was contacted by Nasoya to try out their product Nasoya Pasta Zero Shiritaki Noodles and got straight to work coming up with a delicious recipe.

First things first, if you?re not familiar with shiritaki noodles, they are a traditional low carb Japanese noodle?that are ?20 calories per serving. Total calorie bargain ? you save about 200 calories over regular pasta.? Plus, they are all natural, vegan, fat free and gluten free.

Shiritaki noodles alone have no taste, but when you add them to your favorite dish, they absorb the flavor. They have a great texture and completely take care of any pasta craving! I?ve seen these noodles used in traditional pasta dishes, like spaghetti and fettucini alfredo, but I wanted to try them in dish with Asian flair.

This noodle bowl is pretty amazing if I do say so myself. All the flavors come together brilliantly ? spicy, sweet, salty ? and the noodles and vegetables add enough bulk to the dish that you feel satisfied ? for less than 300 calories!

One word of warning?shiritaki noodles have a very distinct odor. You must rinse them. Once rinsed and added to your dish, the odor completely disappears. All you are left with is a guilt free noodle-fest.

Coconut Lime Noodle Bowl with Shrimp {Sponsored Post}

Gather

1 tablespoon olive oil

1/2 cup light coconut milk

1/2 tablespoon fresh grated ginger

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (more or less to your taste)

1 tablespoon lemongrass

4 ounces snow peas

4 ounces shiitake mushrooms

1 red bell pepper, julienned

juice of 1 lime

handful cilantro

1 package Nasoya Pasta Zero Shiritaki Spaghetti

10 large shrimp

Step by step

  1. Open up the Nasoya Pasta Zero Shiritaki Spaghetti and drain and rinse well in a colander. Allow the noodles to drain while you prepare the rest of the recipe.
  2. Heat the olive oil over medium high heat in a wok or large skillet.
  3. Add the garlic and saute for about a minute, being careful not to burn it - burned garlic is gross!
  4. Add the ginger, red pepper and lemongrass to the pan and stir to combine.
  5. Throw the snow peas, red bell pepper and mushrooms.
  6. Saute for 3-4 minutes till the vegetables are cooked but still slightly crisp.
  7. Pour in the coconut milk and lime juice and using a wooden spoon, scrape up all the yummy bits from the bottom of the pan.
  8. Allow the coconut milk to come to a low boil, then add the shrimp.
  9. Reduce heat slightly and continue cooking for a few minutes till shrimp are opaque.
  10. Add the Nasoya Pasta Zero Shiritaki Spaghetti to the pan. Toss to combine.
  11. Divide the mixture between two bowls.
  12. Serve with a sprinkling of chopped cilantro and limes for squeezing.
